In Bologna for Carnevale, what we call Shrove Tuesday, they make these particular filled pasta called Balanzoni. A fresh green pasta dough made with flour, eggs and spinach, filled with ricotta and Mortadella and then served with butter butter & sage.
Come and join us on Shrove Tuesday, we’ll make the dough, the filling and then the Balanzoni. We’ll eat a little together and the rest you can take home for your Carnevale supper 🙂
